Red Velvet Cupcakes!

Another Friday, another Cupcake Jemma recreation, this time in the form of Red Velvet Cupcakes!

 

I made these last week because I was home from university and wanted to take full advantage of the fully functioning oven (you only miss it when you have to put up with one in a student house with no light that could be any temperature regardless what you put it on, believe me!) and the wider variety of ingredients we have at home. As is probably becoming clear already, I am completely obsessed with Cupcake Jemma and just think her recipes are incredible and super easy to follow, so as usual I turned to her YouTube channel for a recipe.

 

This is a big statement, but I think these might be my favourite cupcakes I’ve ever made. I know.

 

Although mine didn’t end up being very red (or red at all – I should’ve listened to Jemma about getting colouring paste rather than colouring gel! Oh well, learn from my mistakes) they were absolutely delicious. There’s something about the slightly chocolatey sponge with just a hint of vanilla combined with the cream cheese icing that is just divine. The sponge, along with the amazing flavours, was incredibly soft and light and cream cheese buttercream icing is potentially my new favourite thing about cupcakes. I cannot recommend this recipe enough. If, like me, you have a huge weakness for red velvet cakes definitely try it out!
